Default Tasty Pasta Sauce

Tasty Pasta Sauce

8 ripe vine tomatoes
4 large cloves of garlic
10 nice clean mushrooms
1/2 red pepper deseeded
1 medium onion
1/2 can sweetcorn
dried parsley
dried basil
sea salt
ground black pepper
balsamic vinegar
olive oil

method

blend the tomatoes the red pepper, and the garlic then put to one side
put enough olive oil for shallow frying into a pan, then finley slice the onions and mushrooms, and fry them untill the mushrooms are soft.
add the tomatoe, garlic and pepper that you've blended, and mix, keeping it on a low heat.
then add the parsley, basil salt and pepper (enough to taste how you like it) then add the sweetcorn.
keep over a low to slightly medium heat stiring occasionally, allowing all the flavours to infuse.
then add a couple of dashes of balsamic vinegar, and continue to stir (adding more of the herbs or balsamic of you prefer it a little more stronger)
leave on a very low heat, stiring now and again for approx 20 mins.
you should then find yourself with a lovley fresh pasta sauce!

(you can double the ingredients, and allow to cool, then freeze for a lovley fresh pasta sauce at hand when you want)

That sounds yum! I love vine tomatoes and I love pasta sauces. I would probably add some fresh chillis to your recipe to give it a little kick, oh and I don't like mushrooms so would think of something

Nice post

What country of origin is that recipe, is it American? It's just a variation i've not come across before.

It sounds really nice though and will be tried by me probably within the next couple of days.

Thanks for sharing, if you have any more please share, I love learning new recipes, especially ones i've not come across before. I can't help it, the ex-chef in me takes over.
