Devil May Cry - Would have to be Nelo Angelo, the 3rd match when he reveals himself as Vergil, I always loved this boss as it was a worthy opponent.
Devil May Cry 2 - Bolverk would definately be my favourite here, always a challenge with the stretching sword and wolves at his side.
Devil May Cry 3 - Beowulf, fast, brutal and strong defense. Beowulf is my favourite of all 3 games, a true test of skill.
